Hello friends! Welcome back to Coon Creek for your cyber coffee-break. Don't you just love Thursdays? I do--and you're a big part of the reason! ~smile~

I bet you're all looking forward to the Big Game on Sunday. I know there are die-hard fans out there that live and die with every first down, but knowing southerners like I do, I suspect there are just as many who see the Super Bowl as a great opportunity for food and fellowship. Whichever group you fall into, if you plan to munch while the big boys crunch, you'll want to check out the dip and chip in this week's "Taste of the South". (I'd even consider a trial run if I were you; this one is good!)

If you're a farmer, or if you love a farmer--you'll see more than a little bit of truth in the riddle posted in the "Southern Exchange". One of our regulars sent it in.

"Chuckles"

A farmer had five female pigs and, as times were hard, he had determined to take them to the county fair and sell them. While at the fair, he met another farmer who owned five male pigs. After talking a bit, they decided rather than sell the pigs they'd mate them and split everything 50/50.

The farmers lived sixty miles away from one another so they agreed to drive thirty miles and find a field in which to mate their pigs. The first morning, the farmer with the female pigs got up at 5 am., loaded the pigs into the family station wagon, and drove the thirty miles.

While the pigs were mating, he asked the other farmer, "How will I know if they're pregnant?" The other farmer replied, "If they're in the grass grazing in the morning--they're pregnant, if they're in the mud--they're not."

The next morning the female pigs were rolling in the mud, so he hosed them off, loaded them again into the family station wagon and proceeded to try again. The following morning the pigs were in the mud again! This continued all week until one morning the farmer was so tired that he couldn't get out of bed. He called to his wife, "Honey, please look outside and tell me if the pigs are in the mud or in the field."

"Neither," yelled his wife, "they're in the station wagon and one of them is honking the horn!"

"A Taste of the South"

Yum! I had this dip during the holidays. Bring it out for your Super Bowl party and watch it disappear.

"Super Sunday Chip-and-Dip"

• 16 oz. can refried beans
• 1 t. plus 1 T. Chili powder or taco seasoning mix
• 1 T. lime juice
• 8 oz. cream cheese(softened)
• 4 oz. can chopped green chilies
• 1 garlic clove, pressed
• 1/2 c. onion, finely chopped
• 3.25 oz. can chopped black olives, divided
• 1 1/4 c. shredded cheddar cheese, divided
• 1 T. fresh cilantro, or 1 t. dried

Preheat oven to 400. Combine refried beans and 1 t. chili powder, then spread in bottom of square or round dish. Combine cream cheese, lime juice, chilies, garlic and remaining 1 T. chili powder and mix until smooth. Add onion, olives and 1 cup of cheese, mix well. Spread over beans. Bake 20-25 minutes or until hot. Top with remaining olives, cheese and cilantro.

BAKED TORTILLA CHIPS Cut a 7 inch flour tortilla into 8 wedges with pizza cutter. Arrange on cookie sheet. Lightly spray with cooking oil. Sprinke with salt. Bake at 400 until lightly golden.

"Spotlight on the South"

SPOTLIGHT ON THE BIG EASY

Historians suggest "The Big Easy" is a nickname from the turn of the century, taken from a dance hall by that name. Whether or not the story is true, the moniker aptly describes the gentle and relaxed pace for which the city of New Orleans is best known. Come see for yourself and step back in time.

A ton of work must have went into this online introduction to New Orleans. Take a few moments to enjoy beautiful panoramic views of the French Quarter with its quaint narrow streets, lined with their distinctive European architecture and wrought-iron balconies. Then with a point and click, you can take a virtual tour of the New Orleans Metropolitan Convention & Visitors Bureau, Inc. where you can find exhibits such as "America Goes to War" or experience the grandeur of The Elms Mansion. The entire family will love the Louisiana Children's Museum where interactive exhibits put the fun back into learning. Here children can shop for groceries in a pint-sized supermarket; pretend to be reporters; climb a rock wall; step inside a huge bubble; become a meteorologist; and learn about the daily challenges of being physically disabled. For more of the real world they can visit the kids' cafe, where children are transformed into waitresses, waiters and guests. For the history buff's there's an interative Mardi Gras exhibit that tells the story of one of the world's most famous festivals.

Oh, yeah--did I mention that New Orleans is also proud to be hosting the Big Game this weekend? ~smile~ Maybe after your virtual tour you'll see why the proud residents of New Orleans think Super Bowl XXXVI is just icing on their King's Cake.

"Southern Comfort"

God's word is alive! It can breathe encouragement into conflict and victory into defeat. Try reading the Word like the lady searching for the lost coin. Expect the heavens to part and a thundering voice to speak to your need.

If I remember to read this way I always get more from my study time. One day I was searching the scriptures like this during a particularly trying time when a verse jumped out at me, and became so real to me, that I could almost believe the clouds had indeed parted. It was great! But the best part is that I can't quote this verse now without that feeling of peace returning to me.

Let me encourage you to read the Bible expectantly. Once a part of it becomes life to you--it will be yours forever. The verse that spoke to me that day? Micah 7:8: "When I fall, I shall arise and when I sit in darkness the Lord shall be a light unto me."

I saw this in the form of a wall hung plaque and I made one for my nephew, Bobby Holt, and gave it to him for Christmas-- Everybody who saw it, liked it, and had fun solving (understanding) its meaning. It goes like this:

How I wish my children and grandchildren could have experienced this type of living.
